Blueberry Ricotta Pancakes

One of my favorite things to make as blueberries come in season are blueberry ricotta pancakes, and one of my favorite things to DO when they come in season is to go out to a U-Pick farm and bring home loads of them, freeze them on cookie sheets, then pour them into canning jars and into the freezer so I can make these pancakes year-round. As usual, I’m sharing the source of my ingredients and eco-tips to boot…

PS – It’s vegan friendly – make a cashew ricotta and use dairy free butter and nut milk!

BLUEBERRY RICOTTA PANCAKES

  • 1 1/2 c organic all purpose flour (bulk aisle or King Arthur – Bob’s now bags in plastic, wtf!)
  • 1 t baking powder (bulk aisle!)
  • 1/4 t baking soda (bulk aisle!)
  • 1/4 t salt (bulk aisle!)
  • 1 1/2 T sugar (bulk aisle!)
  • 4 T melted butter (FYI – butter cube wrapping is compostable, the boxes the cubes all come in? neither compostable nor recyclable as they are plastic-woven)
  • 1/2 c organic ricotta (but if you can make your own, the taste is incredible…)
  • 1 egg (we use our ducks’ eggs, otherwise get organic/local/free-range chicken eggs, the taste is clear)
  • 1/2 c organic orange juice (pay attention to the labels! first, not all OJ is pure OJ – even the organic stuff they often add tangerine and it tastes different! second, it’s very rare to find OJ where it’s from 100% USA-grown fruit…often comes as far as South America, fully defeating the eco not to mention compromising flavor from the time it takes to get here)
  • 1/3 c milk (we use homemade oat milk, or if we’ve just made cheese, leftover whey)
  • 1/2 t organic vanilla (we make our own from vodka & fair trade beans via Etsy)
  • 3/4 c organic blueberries (we like U-Pick farms, this year we’re going here)
  • 1/2 t orange zest (I usually use dried but obviously the flavor is ideal if it’s fresh!)
  • organic butter + grapeseed oil for skillet (or home-rendered lard if you got it!)

In medium bowl, combine flour –> sugar. In another bowl, whisk butter –> vanilla. Combine just until blended and gently stir in berries & zest.  Cook ’em on the griddle!
