Sweet Tomato Jam

okay so the picture doesn’t do it much justice…

This is my favorite thing to make after I’ve chopped tomatoes up for canning and then realize I don’t have quite enough to fill up a quart jar.

Sweet Tomato Jam
2 cups chopped tomatoes (p.s. I never peel tomatoes unless I’m making soup, waste of time and vitamins!)
1 cup rice vinegar
4 Tbsp organic sugar
2 Tbsp local raw honey
2 Tbsp organic molasses
1 1/2 Tbsp minced garlic
1/2 Tsp cinnamon

Combine all ingredients and bring to a boil.  Reduce to a simmer and cook 30-50 minutes until most of the liquid has evaporated.   Note:  keep an eye on it every 10 minutes or so and stir – it really depends on how juicy your tomatoes are as far as how long it takes to boil down into a ‘jam’.  Of course you can waterbath can this into a 1/2 pint jar (it reduces considerably) but for me I just pop it in a glass container and use it now.  It’s too good to wait on….

Spread over a piece of crusty bread instead of bruschetta, or layer it with something delicious onto a sandwich.  Smells so good, tastes even better…
