Something new…the Honey Ginger Balsamic truffle…

Every once in a while fate crosses your path and you’re presented with a new idea.  For me it happened on Thursday.  With some time to spare before the matinee (Get Low if you’re interested – a fantastic film), I wandered around the area near the Fox theatre, and happened up on Benessere Oils & Vinegars, stocking a gorgeous supply of oils (olive, grapeseed, avocado, to name a few) and balsamic vinegars (in every flavor imaginable) available to purchase in a little or a lot.  The owner was exceptionally cool, teaching me much about the flavors and processes involved.  I fell in love instantly with the Honey Ginger White Balsamic Vinegar, and promised to experiment with it in a new truffle.  After all, I use local raw honey in them anyhow, and one of my most popular flavors is the Ginger Spice, so why not try a variation?

Well – no regrets here!  Swirling together this beautiful vinegar with bittersweet chocolate, soy cream, raw honey, and a smidge of vanilla, then dipping in dark chocolate and dusting with a bit more ginger?  Mmm, tangy…chocolatey…complex…delicious.
