Easy Comfort Food….the Yellow Bell English Muffin with Egg

How to make easy insanely good comfort food on a rainy Sunday afternoon?

Put a tablespoon of butter in a pan.  Pick a beautiful yellow bell pepper out of the garden and slice up nice and thin, and saute for a few minutes.  Grab two uber local eggs donated by your next door neighbor’s hens and crack them on top of the peppers as they saute (do NOT flip them).  Plunk a whole wheat English muffin in the toaster and dab a little butter on it when it’s done.  Slide the eggs (sunny side up) and peppers on top of the English muffin. Let the drooling commence, or just inhale while watching old movies on DVD (I recommend Cat on a Hot Tin Roof).  Smile and be happy.

(and yes this sounds simple and with crap eggs from Walmart this won’t have the desired effect.  Go to your farmers market if you don’t have hens or friends with hens – spend the extra money – it’s better for the local economy, better for the chickens involved, and wayyyy better on your tastebuds).
