The serranos are growing happily in this freakish heat, and that’s going to make the Bittersweeties quite happy with another batch of my seasonal Serrano Pepper truffles.
What’s lovely about the serrano is that it’s got some heat, but in a less terrifying way than the infamous Cayenne…which means someone like myself can ease into the hot/sweet combination a bit easier. While my Cayenne Truffle can clear the sinuses in a few seconds with it’s overt spice and chili flake accompaniment, the Serrano is slightly mellowed and sweetened by the jelly that I make it into before I stir it into the bittersweet chocolate ganache.
So while Cayenne is the showgirl, Serrano is the seductress. It’s a lovely little surprise as summer begins to hint at you that it may not go on forever…
